The process begins with keeping the bean in the coffee cherry for 24 hours. Once the beans are extracted from the mucilage, they rest on a drying patio for 15 to 25 days before undergoing a stabilization process. ContempoRoast then gives these beans a medium-dark roast, resulting in a clean, balanced cup.
